Homemade Chorizo

A crave-worthy addition to any nacho platter, this chorizo delivers a bold, savory flavor that keeps everyone coming back for more.
2-3 cups
1 lb ground beef or pork (80/20 works best)
Pro Tip: Spices release their flavor in fat, so an 80/20 blend will produce a richer, more flavorful result than a leaner 90/10 mix.
2 teaspoons smoked paprika
½ teaspoon ground cumin
½ teaspoon Mexican oregano
¼ teaspoon round cinnamon
¾ teaspoon garlic powder
¾ teaspoon ancho chili powder
½ teaspoon chili powder
¼ teaspoon ground clove
½ teaspoon kosher salt
1 tablespoon olive oil
Pro Tip: build a big batch of spice blend so you have it ready for the next handful of batches.
Splash of Mexican style dark beer or Amber ale
1. Combine all spices and salt together in small bowl.
2. Place a skillet of medium high heat. Add olive oil.
3. Brown the ground beef (or pork), breaking apart as it cooks.
4. Add spice mix and stir thoroughly into the ground meat.
5. Cook over medium low heat to let flavors of spices toast and develop. There will be some browning that happens to the bottom of the pan. This is flavor! Manage the heat level to make sure it doesn’t burn.
6. Add a splash of beer(or water) to pan. Use just enough to be able to scrape the brown bits off the bottom of the pan.
7. Taste and adjust season with salt as needed.
